Which flour for which job?

• Pide and lahmacun flour (Ova 2): for thin doughs baked at high heat in stone ovens.
• Börek and pastry flour (Ova 1): for börek and gözleme, and the flour most lahmacun, pide and tırnak pide bakeries use.
• Baklava and börek flour (Çift Geyik): for baklava and thinly rolled yufka.
• Bakery flour (Joker) and baked goods flour (Ova Yıldızı): for poğaça, açma and bakery pastries.
• Pizza flour: for pizza and croissants.
• Dusting flour and corn flour: for dusting the bench and for frying fish.
